Eggless Chocolate Mousse with Agar Agar

Mousse is a french word which means something light and airy in texture. Mousse is a type of airy texture food either prepared as a sweet or savoury goes for light and fluffy to creamy and thick texture. Dessert mousses are made typically with whipped egg whites or whipped cream, they are usually flavoured with chocolate or a with fruits puree, mousse dessert are served after a heavy meal and this light dessert will suits pectly for many occasions and sometimes chocolate mousse is used for making frosting cakes or in entremets, a variety of single serving desserts.

Coming to todays chocolate mousse its completely egg free, gelatin free. A very light and delicious dessert prepared with milk, cream,agar agar,melted chocolate and cornflour. This mousse is extremely easy to prepare and seriously gets vanished very much quickly too.This is my third post for this weeks blogging marathon under the theme chocolates..Check out the Blogging Marathon page for the other Blogging Marathoners doing BM#33..


2cups Milk
1tbsp Cornflour
4tbsp Sugar
1tbsp Cocao powder
1/4cup Chocolate chips
2tsp Agar agar powder
1/2tsp Vanilla essence
1cup Cream

Mix the cornflour, cocoa powder with quarter cup of milk and keep aside.

Bring boil the milk with sugar in a pan.

Add the chocolate chips,cocao-cornflour paste to the boiling milk and stir continously.

Remove it from the flame and let it cool.

Meanwhile bring boil quarter cup of water, add in the agar agar powder, cook until it gets dissolves. Let it cool completely.

Beat the cream until they turns fluffy.

Add the agar agar mixture,cream to the chocolate custard.

Mix everything gently and pour this mixture to the serving bowl or ramekins.

Keep in fridge for atleast two hours.

Decorate it with sugar pearls or sprinkers.

Serve.

Eggless Choux with Eggless Chocolate Mousse 5years of Blogging

Cant believe,i have been blogging for a long yes today is 5years of blogging.. Happy birthday to my blog baby,am very much proud of my space and this virtual baby brought me so many beautiful moments in my life.My space earned me many awards,many appreciations,many friends, many gifts and more. I dont have words to say how i love my space and i cant sit idle without feeding my blog baby. This virtual world teached me so many lessons,i stopped running behind eggs, started experimenting with organic grains, finally i have became an Healthnut and am proud to be.

For the celebration, am sharing today an eggless choux, a famous french pastry and a delicious eggless gelatin free chocolate mousse. Choux is a french pastry which goes for egg and for me without egg i cant imagine making this cute chouxs, but trust me Baking Eggless, owned by Gayathri  taught me how to make choux without eggs, seriously am loving this baking group and we are learning the alternatives and subsitutes of eggs. As i told earlier, now am not running behind eggs,yep i learned how to make both eggless and vegan bakes through this immense virtual world. Coming to this choux, this choux are easily available here in bakeries and its one of our family favourite.

Usually choux are filled with whipped cream while eclairs the elder sister of this choux is filled with various filling, they are oblong shaped pastries and my favourite eclair is coffee flavoured one. For the first time in my life i tried making this famous french pastry choux without eggs and replaced the eggs with flax seed powder and baking powder. Actually i have to serve the choux filled with the mousse but since i went for small choux, i served the mousse along instead of filling the choux. However we loved it thoroughly and i baked these eggless choux twice.

Eggless chocolate mousse goes for an no gelatin mousse, its a quick and very addictive eggless mousse to enjoy thoroughly with any pastry, it will be very light,airy and very chocolatey.Thanks to Shey of Just Not the Cakes for pulling us to make this fantastic challenge.



Eggless Choux:
1cup All purpose flour
1tsp Baking powder
100grms Butter
2cups Milk
1/4tsp Salt
4tsp Sugar
2tbsp Flax seed powder
6tbsp Warm water
Some sugar pearls

Sieve the baking powder, flour together, add in the sugar and salt.

Now add the flax seed powder to the warm water, mix it and keep aside.

Heat the milk, butter in a heavy bottom pan and bring it to boil.

Reduce the flame and add slowly the flour mixture, stir until the flour gets cooked and looks like a dough.

Now add the flax seed mixture, and mix vigorously.



Preheat the oven to 350F.

Transfer this a pastry bag, line a baking tray with a baking sheet.

Pipe it as round balls , give a milk wash and sprinkle the sugar pearls on the top.

Bake for 10-12 minutes at 350F.


Eggless chocolate mousse:
2cups Heavy cream
1cup Semi sweet chocolate chips
4tbsp Butter

In a chilled bowl, beat the heavy cream until they turns smooth and stiff, keep it in fridge.

Meanwhile take the chocolate chips and butter in a bowl.

Put this bowl on the top of the simmering water sauce pan, make sure the water should not touch the bottom of the chocolate bowl.

Melt the chocolate completely, stir continously and remove it,let it cool for few seconds.

Now gently drop the whipped cream and slowly fold it.

Dont deflate the whipped cream, take care of it.

Divide the mouse to an individual serving glass and keep it in fridge for an hour or 2hours to set.

Serve with eggless choux, either filled or as accompaniment.

Chocolate Fudge Cake With Eggless Chocolate Mousse

Since a long, i want to make a chocolate fudge cake for a special occasion. Yesterday was my husbands birthday and finally i got a chance to give a try to a chocolate fudge cake.I dont want to spend loads of time in frosting as none at home like the famous butter cream frosting and finally i decided to go for a chocolate mousse to top the cake instead of making a frosting. I bookmarked Nigellas chocolate fudge cake long back,i made few changes in this recipe according to my tastbuds. I just replaced the sour cream with mascarpone cheese and chocolate powder with melted dark chocolate. This cake turned out super rich,extremely fudgy and definitely a real feast for a chocoholic person like me.

As i prepared this cake bit rich, i opted for an eggless chocolate mousse to top it with. The chocolate mousse i prepared went for whipped cream,butter and chocolate. We enjoyed thoroughly each and every bite of this cake and needless to say that i had hard time in hiding this cake from my husband, by gods grace he didnt noticed anything as he worked this weekend. He was completely surprised and shocked to see this chocolate fudge cake along with his favourite perfume which he really want to add to his perfume collection. Worth to try this cake for a special occasion.


Chocolate Fudge Cake:
2+2/3cups All-purpose flour
3/4cup Sugar
1/4cup Light brown sugar
1/2cup Melted dark chocolate
2tsp Baking powder
1tsp Baking soda
1/2tsp Salt
3nos Eggs
1/2cup Mascarpone cheese
1tbsp Vanilla extract
3/4cup Butter(unsalted, melted and cooled)
1/2cup Oil
1cup Chilled water

Preheat the oven to 350 degrees F. Grease and line a baking sheet in a springform round pan to cover completely the bottom and the sides of the pan.(mine is 26cm, you can also half the quantity and go for a 8inch baking pan, but never forget to line a baking sheet, as this cake tend to get stick to the pan)

In a large bowl, mix together the flour, sugars, baking powder, baking soda and salt and keep aside

In an another bowl,whisk together the eggs, mascarpone cheese,melted chocolate and vanilla until blended.

Using a hand mixer, beat together the melted butter and oil until just blended, then beat in the water. 

Add the dry ingredients all at once and mix together on a slow speed.

Add the egg mixture, and mix again until everything is blended and then pour into the prepared pan.

Bake the cake for 25-30 minutes or until a skewer inserted comes out clean. 

Let the cake gets cool completely. Dont remove the cake from the pan if you are going for chocolate mousse. Else you can remove it from the oven and frost it as you desire.



Eggless Chocolate Mousse:
200grms Dark chocolate bar (chopped roughly)
100grms Butter
3cups Heavy whipping cream
1tsp Vanilla extract

Take the roughly chopped chocolate chunks,butter in a heat proof bowl.

Put this bowl on the top of the simmer water sauce pan, make sure that water should not touch the bottom of the top bowl,melt the chocolate completely by stirring continously.

Once melted,remove the chocolate and keep aside to get cool completely

Meanwhile whip the cream with a hand mixture until you get soft peaks.

Add the vanilla extract and mix it.

Now refrigerated half of the whipped cream in a bowl, and keep aside half of the whipped cream in room temperature.

Gently fold in the melted chocolate and whipped cream until they get well mixed.

Now add in the already refrigerated whipped cream and fold it gently without deflating the whipped cream.

Pour this cream over the cooled cake and let it sit in fridge for overnite.

While serving, remove the spring form pan gently without disturbing the chocolate mousse, remove the baking sheet from the cake.

Arrange gently the malteser balls or kit kat balls over the mousse and decorate it.

For Eggless Fudge Cake:

You can replace very well the eggs with one cup of pureed tofu or thick yogurt.

You can also replace the eggs with 2 tablespoons of white vinegar.
