We Baking Partners will be baking different bakes every month and will be posting every 15th of the month. This month challenge is cupcakes or muffins, this is our third challenge after a wonderful almond cake and cookies. Swathi of Zesty South Indian Kitchen, the brain child of this fabulous baking event send us three interesting cupcake and muffin recipes.Three of our baking partners suggested us these beautiful recipes and i choosed to bake two among them,one is this super delicious,addictive chocolate pumpkin cupcake. When its comes a bake with chocolate, everyone at home will never hesitate a second to request me to make some.While going through the mail i recieved with this months challenge, i know ill be making this chocolate pumpkin cupcakes and gathered everything to make this incredible cupcakes during a weekend. My kids enjoyed thoroughly and even my lil one helped to squeeze out the frosting.Priya R of Cook Like Priya suggested this cupcake recipe from Country of Living.


2+1/2cups All purpose flour
2tbsp All purpose flour
4nos Eggs
1+1/2cups Sugar
1+1/2cups Pumpkin puree
2tsp Vanilla extract
2+1/4sticks Softened butter
1cup Cocoa powder
1tbsp Baking powder
1+1/2tsp Baking soda
2tsp Cinnamin powder
3/4tsp Nutmeg powder
3/4cup Buttermilk
Preheat the oven to 350F, line the cupcake moulds with cupcake papers, but i used my silicon moulds.
Sift the flour with cocoa powder,baking soda,cinnamon powder and nutmeg powder in a large bowl and keep aside.
Combine the buttermilk,pumpkin puree, vanilla extract in an another bowl and keep aside.
Beat the butter,sugar together in a bowl with a electroc mixer until the mixture turns fluffy, add the eggs one at a time and beat well after each addition.
Alternately add the flour mixture and the buttermilk mixture,blending well after each addition.
Spoon out this batter to the already prepared cupcake moulds and bake in middle rack for 20-25minutes until a skewer inserted comes out clean.
Keep aside and let them cool completely.
Orange Cream Cheese Frosting:
1cup Cream cheese (softened)
1/4cup Softened unsalted butter
1tbsp Fresh orange juice
1tsp Orange zest (grated)
4cups Confectioners sugar
1/2tsp Vanilla extract
2pinch Orange food colour
Blend the cream cheese,butter,orange juice,orange zest,vanilla in a large bowl using a electric mixture until smooth.
Slowly add the sugar and continue to beat until the mixture turns light and creamy.Arrange in fridge atleast for an hour before frosting.
Fill this chilled frosting in a pastry bag with your favourite nozzle or tip and squeeze gently to decorate.
Enjoy this cupcake with a cup of tea, beware that this cupcakes are pretty addictive.

Soya Bhurji Cheese Sandwich

I know in most of the Indians home we will pack lunch and snacks for schooling going kids everyday, but here in Paris, i dont pack foods for my kids as their schools are just 5minutes by walk from our appartement, but i pack foods for my H as he dont like to have French foods everyday in his office canteen. My kids come back home for their lunch everyday obviously i wont stress or strain for preparing everyday their lunch at home.Since i want to live the experience of preparing a lunch box, i chosed this weeks theme of blogging marathon as mess free tiffin box.So i prepared three different dishes which fits pectly for this weeks blogging marathon theme.
After a biscotti, am gonna share a protein rich sandwich which goes for a super quick soya bhurji which is simply prepared with soya nuggets. Soya bhurji is prepared as much as like the famous egg or paneer bhurji with usual spices. My elder son is not a fan of these soyachunks obviously ill try to add them as much as possible in his diet by cooking them with other ingredients. Since he love mozzarella cheese very much, i prepared this sandwich with soya bhurji and mozzarella, trust me he simply finished his plate and asked me for an another sandwich, i was happy that he had two sandwiches without even knowing the secret ingredient i have hidden in this sandwich..Check out the Blogging Marathon page for the other Blogging Marathoners doing BM#34.

1cup Minced soya granules (cooked)
2nos Onions (large & chopped finely)
1tsp Ginger garlic paste
2nos Green chillies (chopped)
1/2tsp Red chilly powder
1/2tsp Garam masala powder
Few chopped coriander leaves
1/2tsp Fennel seeds (crushed)
Salt
Oil
Heat enough oil in a pan, fry the crushed fennel seeds, add immediately the chopped onions,chopped green chillies and ginger garlic paste,saute until the raw smell goes away..
Add the cooked soya granules,salt,red chilly powder and garam masala powder,cook everything in simmer until the masala turns thick..
Finally add the chopped coriander leaves and put off the stove.

Do you know National Doughnut Day is celebrated in United States on every first friday of June. As per Wikipedia,A doughnut or donut is a type of fried dough confectionery or dessert food. The doughnut is popular in many countries and prepared in various forms as a sweet snack that can be homemade or purchased in bakeries, supermarkets, food stalls, and franchised specialty outlets. They are usually deep-fried from a flour dough, and typically either ring-shaped or without a hole and often filled. Other types of batters can also be used, and various toppings and flavorings are used for different types, such as sugar glazing, chocolate glazing, or maple glazing.
There are so many stories behind the origin of doughnuts, Wiki says that Hanson Gregory, an American, claimed to have invented the ring-shaped doughnut in 1847 aboard a lime-trading ship when he was only 16 years old. Gregory was dissatisfied with the greasiness of doughnuts twisted into various shapes and with the raw center of regular doughnuts. He claimed to have punched a hole in the center of dough with the ships tin pepper box, and later taught the technique to his mother.
For this months We Knead to Bake, an incredible baking event by Aparna challenged us with baked doughts, if you are health nut and wanna a give a try to baked version of doughnuts, you will definitely love this beauties.Butter in this doughnuts turned them simply flavourful,spongy and extremely prefect as almost like the fried ones. These baked doughnuts are quite addictive and since its baked you wont feel guilty to have one more.

Adapated from Lara Ferronis Doughnuts
3+1/2cups Cake flour or all purpose flour
3/4tbsp Instant yeast or 1tbsp Active dry yeast
1/2tsp Salt
1cup Warm milk
1/4cup Superfine sugar
2tsp Vanilla extract
100grms Butter (cut into cubes)
Lemon Cream cheese glaze:
1/2cup Cream cheese
1tsp Lemon juice
1/2tsp Lemon zest
1cup Confectioners sugar
A pinch Yellow food colour
Take the sugar,milk,yeast,salt and vanilla in a food processor and pulse it well.
Add 3cups of flour and process, add the butter pieces gradually and process, now add the remaining half a cup of flour to knead a soft,pliable and elastic dough, if the dough is sticky add few more flours.
Transfer the dough a floured surface and knead gently until the dough turns super soft.
Shape as ball and place it in a greased mixing bowl and ocover with a damp towel.
The dough will take an hour to double in volume.

Punch down the dough and roll out as 1/2inch thick circle.
Cut out the doughnuts with a doughnut cutter or else use a medium sized bottle lid and a super small bottle lid.
Place the doughnuts over a lightly greased baking sheets,leaving enough spaces between them.
Re-roll the dough and continue the same process until the dough gets finished.
Let the unbaked doughnuts rise for about half an hour or till almost double in size.
Bake at 400F, for about 7-10minutes till the crust turns golden brown,dont overbake them.
While they are baking, time to make the lemon cream cheese glaze..
Take the cream cheese,lemon juice,lemon zest,yellow food colour,confectioners sugar in a bowl,mix well to make a lemon glaze and keep aside.
Let the baked doughnuts gets cool completely, then dip one side of the doughnuts in the lemon cream cheese glaze and let it set.
Enjoy with ur favourite drink or for snacks.
