Red Rice Dosa Sivappu Arisi Dosai

Red Rice is a unhulled rice, meaning only the outer hard  husk has been removed, leaving the inner cover (bran) of the rice grain intact.. It has a slightly nutty flavor and because of the germ of the rice is left intact it has high nutritional value. Red rice is meaty and has volume. One  could say it’s heavy because just a little fills you up fast. Red Rice is mostly grown in Asia and tends to be fairly expensive because the yields tend to be low but of high quality.Red rice has relatively high dietary fiber and lowers cholesterol, control blood sugar levels and regulate weight as little will make you fuller.You can get this healthy red rice in natural,organic and health food stores.

It is reputed to be a healtier alternative to polished rice,contains powerful anti oxidants,and have cancer fighting elements.It may not look attractive for those who love white polished rice, has a slightly funky taste somewhat similar to unpolished brown rice which might put off those who are not used to it.Since red rice had many nutritional value i tried making our South Indian dish  aka dosas and they came out extremely well.

1+1/2cups Red rice
1/2cup Parboiled rice
1/2cup Whole urad dal (without skin)
1/2tsp Fenugreek seeds
Salt

Wash and soak the brown rice,parboiled rice and whole urad dal with fenugreek seeds separately for atleast 4 hours.

Grind as bit coarse batter with enough water in a grinder and add enough salt, mix well and keep it for fermentation.

The next day while making dosas, give a stir to the fermented batter.

If your batter is thick, just add water to make them little bit thin.

Heat a non stick pan, grease the pan with oil using a paper towel.

Now pour a spoonful of batter and turn in clockwise to small circles..

Drizzle few drops of oil around and flip the other side and cook well.

Serve this healthy dosas with any sort of spicy chutneys or sambhar..

Tomorrow is Krishna Jayanthi, hope all are getting ready for the celebration. Even am making few simple sweets and savouries for this festival.If you dont have any time or busy with other stuffs but still you want to make sweets for the celebration you can make this easy,quick,delicious and healthy laddoos with red rice flakes. This sweet takes hardly less than 10 minutes to get ready, actually you can make them with white rice flakes, since am an healthnut i used organic red rice flakes which my mom got me from India before few months back.

Also i prepared this laddoos completely with ghee and they were just mindblowing, if you dont like or dont want to use ghee you can use milk to make this balls. Seriously i love this kind of easy breezy sweets for celebrations and if you conserve them well in an air tightened box, they can stay pect for more than three days.


2 +1/2 cups Red rice flakes, sivappu arusi aval,poha
1cup Sugar
3nos Cardamom pieces
1/2cup Ghee
10 nos Cashew pieces

Dry roast thick red rice poha for a while.

Grind finely the sugar with cardamom,keep aside.

Now grind finely the roasted poha,add everything in a bowl  and mix everything well.

Heat the ghee in a pan add the cashew pieces, fry them until they turns brown and add it to the poha mixture.

Add little by little the hot ghee to the poha-sugar mixture, roll them as balls.

Store them in air tightened box.
