Carrot and Walnut Salad

Most of our dinners are salads and soups, obviously i make variety of salads coz everyone at home like to have different salads. Sometime i will break my head to feed them. Few days back, for our dinner i prepared this healthy,nutty and easy breezy salad with grated carrot and walnuts.
This salad may sound very simple but tastewise they are just mindblowing, the addition of walnuts makes this usual carrot salad very interesting. I served this salad with a vinegar dressing prepared simply with white vinegar, green chillies,olive oil and salt. If you are planning to make a carrot salad, dont forget to add a handful of walnuts. 3nos Carrots (grated)
Handful of Walnuts
2nos Green chillies (chopped)
2tbsp Olive oil
2tbsp White vinegar
Salt as per need
Take the green chillies,olive oil,white vinegar,salt in a bowl,mix and keep aside.
Now take the grated carrots, walnuts in a bowl,mix.
While serving, add the dressing as per need.
Give a stir and serve.

Prostate cancers are fewer smaller on walnut enriched diet

New research from the School of Medicine at The University of Texas Health Science Center San Antonio indicates that eating a modest amount of walnuts can protect against prostate cancer.
The study is described in the journal Cancer Investigation. Researchers at the UT Health Science Center injected immune-deficient mice with human prostate cancer cells. Within three to four weeks, tumors typically start to grow in a large number of these mice. The study asked whether a walnut-enriched diet versus a non-walnut diet would be associated with reduced cancer formation. A previous study found this to be true for breast cancer.
Results
Three of 16 mice (18 percent) eating the walnut-enriched diet developed prostate tumors, compared with 14 of 32 mice (44 percent) on the non-walnut control diet. Also of note, the final average tumor size in the walnut-fed animals was roughly one-fourth the average size of the prostate tumors that developed in the mice eating the control diet.
"We found the results to be stunning because there were so few tumors in animals consuming the walnuts and these tumors grew much more slowly than in the other animals," said study senior author Russel Reiter, Ph.D., professor of cellular and structural biology at the Health Science Center. "We were absolutely surprised by how highly effective the walnut diet was in terms of inhibition of human prostate cancer."
Percentage of diet
The mice consumed a diet typically used in animal studies, except with the addition of a small amount of walnuts pulverized into a fine powder to prevent the rodents from only eating the walnuts. "The walnut portion was not a large percentage of the diet," Dr. Reiter said. "It was the equivalent to a human eating about 2 ounces, or two handfuls, a day, which is not a lot of walnuts."
Study co-author W. Elaine Hardman, Ph.D., of the Joan C. Edwards School of Medicine at Marshall University, published a study in 2011 that showed fewer and smaller tumors among walnut-fed mice injected with human breast cancer cells. Dr. Hardman formerly was a faculty member at the Health Science Center.
"The data to date suggest that using walnuts on a regular basis in the diet may be beneficial to defer, prevent or delay some types of cancer, including breast and prostate," Dr. Reiter said.

Am not a breakfast person, sometimes i will totally skip them and have my lunch earlier. But once i went to my family doctor,she was just shocked to know this and she adviced me to have atleast shake or smoothie with my favourite fruits or vegetable for my breakfast. From that day onwards,if i dont feel like having my breakfast, ill quickly blend some fruits with yogurt or milk and have it instead of skipping. Even my daughter started following it,have her smoothie or shake before she leaves to her school.Here am starting my second week of blogging marathon from today, as usual ill be running for three days with an interesting theme called cooking with electric appliances. Such a very interesting theme na, my kitchen is loaded with electric appliances, i cant spend a day without them.
I start my day with them and end my day with them,yep the appartment we live dont have gas connection so obviously my stove top goes for electric induction stove. For my first day, i chosed to showcase my favourite Butterfly blender, i carried from India during my last trip, you can either use it as mixer,juicer, whipper as well as blender. 10nos Walnuts (deskinned)
1/2cup Rolled oats (dry roasted)
2cups Yogurt
Honey (as per need)
Blend together the chopped cucumber,walnuts,dry roasted oats,yogurt with honey as thick smoothie.
Transfer it to a glass and enjoy immediately.

Vegan Cucumber Walnut Chocolate Bread

Vegan foods are always my favourite, actually i learned how to make vegan bakes only after entering this fabulous virtual blogsphere.If i ran out of eggs or milk products, i dont even hesitate a second to prepare my bakes as vegan.As i told earlier, my theme for this weeks blogging marathon is cooking with electric appliances,how can i forget my all time favourite oven. Let me tell you a secret, i have two ovens at home. Now you can guess how am baking this much, i can prepare two or three bakes per day,if i feel very down.
Yes baking makes me happy,coming to this vegan bread, its a quick bread and i prepared this bread simply with finely grated cucumber, walnuts and chocolate.If am introducing something new in bakes,mostly ill go for chocolate just to mask it. With chocolate,i can feed anything easily to my family members.I really want to make a quick bread for my third day of blogging marathon and went for this months magic ingredients of Magic Mingle Challenge as Kalyani chosed both cucumber and walnuts as magic ingredients.Obviously this bread comes out extremely spongy,super moist and nutty, my kids enjoyed having this bread for their breakfast with their favourite nutella spread.Check out the bloggers running this 24th edition of blogging marathon here.Sending to Siris Celebrating First Anniversary.

1cup Wheat flour
1+1/2cups All purpose flour
1/2cup Chocolate chips
1/2cup Sugar
1cup Oil
2tbsp Flaxseed meal
1/2cup Applesauce
1/2cup Finely grated cucumber
1/2cup Walnuts (chopped roughly)
1/2tsp Baking powder
1tsp Baking soda
A pinch Salt
Melt the chocolate chips with two tablespoons of water in microwave oven for a minute,mix it well and add it to the oil mixture.
Make a well in a middle of the dry ingredients,stir in the wet ingredients and mix with a spatula, dont overmix the batter.
Fold in the chopped walnuts and pour the batter in the already prepared loaf pan.
Bake for 20-25minutes or until a skewer inserted comes out clean.
Let it cool completely and enjoy with your favourite spread.
