Watermelon Salsa

For the letter W under International cuisine theme, we have numerous choices eventhough my first choice i planned to cook up for todays post for my long marathon was wonton soup, then i dropped it coz the day i cooked it was not a pect day to click as it was raining like anything. Then one fine day, i decided to make gaspacho with watermelon and none wanted to have it so i dropped it again, actually the recipe choice of W took me enough time to decide and finally i went for making this watermelon salsa for a birthday party we organised at home for my son during summer. This salsa was a big hit among the adults, its such a light,reshing and quick salsa,just tastes fabulous with tortilla chips.
A pect party starter and definitely a crowd pleaser.Salsa is a sauce which goes usually for tomato based sauces, salsa is a Spanish word for sauce. There are many types of salsa usually vary throughout Latin America. Actually salsa are traditionally prepared using mortar and pestle eventhough blenders are used commonly now. The most popular and easy salsa is pico de gallo which is prepared quickly with raw tomatoes,lime juice,chilli peppers,onions, coriander leaves. This watermelon salsa is in my to do list since a long and finally i could make some during summer.This reshing salsa takes hardly 10minutes to get ready if you have all the ingredients with you.Makes this salsa when you get watemelon abundantly and enjoy them.

2cups Watermelon (cubed)
1/4cup Cucumber (chopped)
1/4cup Red onion (chopped)
1/4cup Green bellpepper (chopped)
1/2no Jalapeno pepper (diced finely)
2tbsp Coriander leaves (finely chopped)
1tsp Mint leaves (finely chopped)
1/4tsp Pepper powder
2tbsp Honey
2tsp Lemon juice
Take the watermelon,cucumber, red onions,green bellpepper, jalapeno pepper,coriander leaves and mint leaves in a bowl.
Add in the pepper powder,honey,lemon juice and toss gently.
Keep in fridge for an hour.
Serve with tortilla chips.

Benefits of watermelon is good for health because it contains a lot of health benefits, here are some benefits and content of watermelon.
- Little sugar content, no fat, and water content suitable for many makes watermelon a diet. Watermelon also be able to make full, so can delay hunger.
- Relatively high content of lycopene in watermelon is useful as an anti-oxidant and can prevent and reduce the risk of prostate cancer.

- Content of arginine in watermelon sitrulin and beneficial form of urea in the liver from ammonia and CO2, useful for laxative urine, kidneys and moisten the intestines healthy.
The content of watermelon seeds have a lot of useful content such as proteins, sitrulin, vitamin B12, and enzineurease. Kukurbositrin content of the watermelon seeds can stimulate the kidneys and keep the blood pressure remained normal.

Watermelon Can Improve Heart Health While Controlling Weight Gain

According to research from Purdue University and University of Kentucky, mice that were given a diet which included watermelon juice received considerable benefits when compared to the control group.
The experts suggest, in the Journal of Nutritional Biochemistry, that citrulline, a compound found in watermelon, was responsible for the mices lower cholesterol, weight, and arterial plaque.
This study coincides with prior research, also by the University of Kentucky, which found that watermelon consumption caused a reduction in atherosclerosis in animals.
Since other research has demonstrated that consuming this type of fruit can lower blood pressure, explained Shubin Saha, co-author and a Purdue Extension vegetable specialist, they were interested to examine what it could do in this research.
"We didnt see a lowering of blood pressure, but these other changes are promising," Shubin Saha added.
The scientists divided mice into two groups for their investigation, both were given diets high in saturated fat and cholesterol. One group drank water that consisted of 2% watermelon juice, while the other mice drank the exact amount of water mixed with a solution that matched the carbohydrate content of the fruit juice.
Results showed that nearly 50% less LDL cholesterol, or the "bad" cholesterol, was found in the animals who drank the watermelon juice, who also gained 30% less weight than the control group.
A 50% decrease in plaque in the arteries, as well as high citrulline levels, were found in the experimental group.
"We know that watermelon is good for health because it contains citrulline," revealed Sibu Saha, a professor of surgery at the University of Kentucky. "We dont know yet at what molecular level its working, and thats the next step."
The team hopes to discover a secondary market for watermelons in nutraceuticals, which are food or food components that provide health and medical benefits, such as preventing and treating certain diseases.
Approximately 20% of watermelon crop goes to waste each year, according to Shubin Saha. It may be because buyers think the fruit does not look appealing or because some farmers do not think it is worth spending that much money on harvesting it, as prices drop during the peak of watermelon season.
Shubin Saha explained:
"We could use the wasted melons that cant go to market for extracting beneficial compounds. Growers are putting energy into these crops, so if we can do something to help them market their additional product, that would be a benefit to the industry and consumers."
