Cauliflower Mayonnaise Sandwich

I can eat everyday for my dinner a sandwich with any filling especially with loads of salads and veggies. I can have even leftover stir fries with some toasted bread slices for my dinner as sandwich. For our third week of blogging marathon, its gonna be sandwich as theme which i choosed immediately as i loved this theme very much.
For the first day of this three day blogging marathon, i went for a easy breezy, healthy and delicious,super filling sandwich with cooked cauliflower florets and mayonnaise,both together works out wonder and even my picky eater enjoyed thoroughly as he loves mayonnaise very much. 6nos Bread slices (toasted)
2cups Cauliflower florets (cooked and finely chopped)
2tbsp Mayonnaise
Mix the cooked cauliflower florets and mayonnaise together in a bowl, you can add finely chopped fresh herbs here.
Take the toasted bread slices, spread generously the already prepared cauliflower-mayonnaise spread and close it with an another bread slice.
Serve immediately.

Cauliflower is a rich source of nutrients especially vitamin C and folate. A cup of cauliflower florets has more than the Recommended Dietary Allowance (RDA) of vitamin C, one third of the RDA for folate, and reasonable amounts of potassium and vitamin B6, also has BIOFLAVONOIDS, indoles, and other chemicals that protect against cancer.
Filling, high in fiber, and low in calories ( 25 in a cup of floaters), cauliflower is an ideal snack food for weight watchers. Raw cauliflower has more folate than when cooked (80% of this B vitamin is lost in cooking).
To retain flavor and reduce nutrient loss, cook cauliflower mushy and releases sulfurous compounds, resulting in an unpleasant odor and bitter taste. Boiling the vegetable in an open pot helps disperse these compounds to avoid the coloring the cauliflower, dont cook in aluminum or iron pots.

When buying cauliflower, look for a head with firm, compact florets. If its is fresh, the leaves will be crisp and green and the head, or curd, snowy white. Broccoflower is a hybrid of cauliflower and broccoli it resembles cauliflower but is green and has a milder flavor, another variety, purple cauliflower, has more vitamin A than the white kind.

Gobi Channa Wrap Chickpeas Cauliflower Wrap

Cauliflower is one of our family favourite veggie, cook it either in steam or in curry everyone at home will definitely enjoy this veggie. Actually cauliflower season is between november to may here, but thanks to frozen section we get this cauliflower florets easily anytime. Have you ever tried combining both cauliflower and channa?? if not give a try..I cooked this beautiful dish today for our lunch and served along with rice and kurma.
With leftover gobi channa, i quickly finished them as this super filling wrap with some homemade chappathis.Obviously our dinner was this fantastic,protein packed wrap. To make this gobi channa more flavourful and healthier, i added some kasuri methi.A super satisfying and definitely a healthy wrap to carry if you are planning for a picnic.Check out the Blogging Marathon page for the other Blogging Marathoners doing BM#27.Sending to Only Legumes guest hosted by Nalini,event by Pari.

20nos Cauliflower florets
1cup Channa/Chickpeas (soaked and cooked)
2nos Onions (chopped finely)
2nos Tomatoes (chipped finely)
1tsp Ginger garlic paste
1tsp Red chilly powder
1tsp Coriander powder
1/2tsp Garam masala powder
1tsp Fennel seeds
1tbsp Kasuri methi
Salt
Oil
Heat enough oil, let crack the fennel seeds, add immediately the chopped onions and ginger garlic paste, saute until the onions turns transculent.
Add now the chopped tomato pieces and cook until they turns mushy.
Now add the cauliflower florets, cooked chickpeas with red chilly powder, coriander powder, garam masala powder and enough salt, saute everything in simmer until the spices gets well mixed with the veggies...
Cook everything in simmer until the oil get separates from the masala.
Immediately add kasuri methi, toss gently until the masala gets well mixed, cook everything in simmer for few minutes and put off the stove.
For wrap:
Chappathis (as per need)
Gobi channa (as per need)
Cook the already prepared chappathis on both sides until they get well cooked.
Place enough gobi channa in chappathis, roll them as a wrap and enjoy.
With leftover gobi channa, i quickly finished them as this super filling wrap with some homemade chappathis.Obviously our dinner was this fantastic,protein packed wrap.
