Eggless Peanut Butter Cookies Home Bakers Challenge 3

As i told earlier, i baked 3 cookies out of 4 cookies suggested by Vijayalakshmi for our this months Home Bakers Challenge, one among the cookies is this peanut butter cookies. Am an ardent fan of peanut butter and my pantry will always a huge bottle of this nutty butter. This peanut butter is quite versatile and tried many dishes out of it, even i tried adding in our Indian eggplant curries, trust me they tastes fantabulous. I baked this peanut butter cookies immediately once Viji announced her choice of cookies and everyone at home just loved munching this super nutty cookies.

Eventhough am not a breakfast person, i dont hesitate a second to munch these baked goodies for my breakfast, yep i just love it that much. 1+1/2cups All purpose flour
1tsp Baking powder
1+1/2cup Crunchy peanut butter
1cup Packed light brown sugar
1/2cup Unsalted soften butter
Milk (as per need)
Preheat the oven to 350F.
In a mixing bowl, beat together the peanut butter, sugar and butter until they turns smooth.
Sift the flour and baking powder together and keep aside.
Gradually add the flour mixture to the wet ingredients and combine,sprinkle milk to turn everything as soft dough.
Pinch off the dough as medium size balls, and roll.
Place it over a baking sheet lined over a baking tray, press the balls with a fork.
Bake the cookies for 15-18minutes until they turns lightly golden.
Cool the cookies on a wire rack and enjoy.

Eggless Strawberry Chocolate Thumbprint Cookies

Thumbprint cookies goes always for shortbread like very buttery and melt in mouth texture cookies. These cookies are seriously very addictive and one of my favourite cookies are simple vanilla and chocolate thumbprint cookies. Todays post is prepared with a fruit pulp that too strawberry pulp, actually these cookies are suggested by Viji for Home Bakers Challenge but somehow i couldnt post these strawberry thumbprint cookies earlier. But thank God these pretty attractive cookies fits pectly for this weeks blogging marathon theme. Theme of this first week is cooking with fruits and i chosed berries from the list given by Srivalli.
After rasgullas and eggless pudding, hope you all will definitely love these scrumptious cookies with strawberries.If you dont get the fresh strawberries, you can still make these cookies with frozen strawberries too, but if you using frozen berries, take care not to add water and make the pulp very thick else your cookie dough will turn watery and your cookies will get flatten easily while baking, they wont retain their shape. 7tbsp Sugar
1/4tsp Baking powder
3tbsp Thick strawberry pulp
A pinch Salt
Chocolate Sauce:
1/4cup Dark chocolate bar (chopped roughly)
2tsp Butter
1tbsp Cream
Sift the flour, salt and baking powder,keep aside.
In an another bowl, take the butter, sugar and whisk until they gets well blend.
Add the thick strawberry pulp,beat well.
Slowly add the flour to the wet ingredients and make a soft dough.
Wrap the dough and keep in fridge for an hour.

Make an indentation in the middle of the each cookie and bake for 10-12minutes.
Meanwhile heat the chopped dark chocolate chunks,butter and cream in microwave oven for 2 minutes,whisk it well to make a thick chocolate sauce.
Once the cookies gets cooled, fill the cookies with the prepared chocolate sauce.
Enjoy with a cup of tea.

Veggie Might Last minute Substitution Oatmeal Apple Cookies

This week, I planned to present you with an alternative to the Christmas cookie, as well as one of my favorite sweets: daifuku, Japanese rice balls stuffed with sweet red bean paste. Three tries ended with me covered in sticky, gelatinous goo.
Let’s just say my technique needs work.
Time was ticking when I decided to scrap the daifuku. My baker’s pantry is still pretty well stocked from Thanksgiving, so cookies seemed like the best choice for a quick and dirty replacement. I turned to the dependable and consistently marvelous How to Cook Everything Vegetarian by Mark Bittman.
Bittman’s How to Cook Everything books take the guesswork out of cooking and baking by showing you how to customize recipes for any situation. If you’re a novice or by-the-book cook, you’ll feel at liberty to make substitutions to suit your tastes or pantry, and you’ll eventually gain the confidence to switch things up on your own.
One recipe reminded me of my mom and I just had to try it: Oatmeal Apple Cookies.
My mom was always trying to get me and my siblings to eat healthy snacks when the rest of our friends and classmates were eating ding dongs and zingers. Oatmeal Apple Cookies are just the kind of cookies she would have made to put in my Muppet Movie lunch box next to the carrot sticks and carob-chip trail mix.
So, at least for today, think of me as your wacky, veggie aunt, offering you whole-grain and fruit cookies when everyone else has laid out chocolate-coated, butter-infused treats rolled in nuts and dripping with icing.
I made a ton of changes, based on MB’s variation ideas and some based on my own perences. He provides a vegan option for most of the recipes in the vegetarian cookbook, and I used his applesauce-for-egg and almond milk for cow’s milk suggestions. I also used nonhydrogenated vegan butter for dairy butter.
Here’s where I ventured out on my own: the original recipe calls for dried apples. I’m not a fan of dried fruit in general and don’t keep it around, so I took a chance and used the real thing. I also swapped granulated sugar for maple syrup. Excellent decisions all around.
The cookies are moist, sweet, and delicious. They may be a little on the soft side —no crispy edges, my favorite part of a cookie—but full of apple flavor and definitely a crowd pleaser; CB, my Roommate, and two of my officemates gave thumbs-up.
The recipe whipped up quickly too, from peeling and grating the apple to pulling the last pan out of the oven, the whole enterprise took less than 90 minutes. Oatmeal Apple Cookies would add a tasty and fast, if not entirely festive, option to the Christmas cookie rotation. And they’re much less sticky than daifuku.

Oatmeal Apple Cookies
Makes about 4 dozen; 2 cookies per serving
1/2 cup nonhydrogenated vegan butter
1/2 cup maple syrup
3/4 cup brown sugar, packed
1/4 cup apple sauce
1 1/2 cups all-purpose flour
2 cups rolled oats (not quick oats)
1 cup apple, peeled and grated (about 1 medium apple)
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp clove
pinch of salt
2 tsp baking powder
1/4 cup soy, almond, or rice milk
1 tsp vanilla extract
1) Preheat oven to 375. Peel and grate apple and set aside.
2) In a large mixing bowl, cream together vegan butter, syrup, and sugar with mixer, then stir in applesauce.
3) In a medium bowl, combine flour, oats, apples, cinnamon, nutmeg, clove, baking powder, and salt.
4) Alternately, add milk and dry ingredients to butter and sugar mixture until dough is formed, mixing in a little more milk if dough is too dry.
5) Spoon out tablespoon-sized dollops of dough onto ungreased baking sheet and bake for 12-15 minutes. Allow to cool for a minute or two, remove from baking sheet, and continue on a wire rack.
6) Serve with a glass of almond milk or hot tea.

How about feeding your kids with some cookies prepared with a natural sweetner,as butterless,eggless,nutty and vegan??,its quite an ideal snacks for me. Recently i tried my hands in making this fabulous zero cholestrol cookies with palm jaggery,peanut butter,chocolate chips with whole wheat flour. Actually i played a game in Facebook by posting the picture of these cookies and a couple for friends played with me to guess the ingredients. After so many guessing finally i revealed that this cookies are prepared with healthy stuffs in it. Also i named this cookies as palm jaggery,peanut butter whole wheat cookies with chocolatechips, sounds a long title na, but Aparna of Home Style Veg Food suggested this name to this cookies hence i named them as this Zero cholestrol cookies. Thanks Aparna, else the title of these cookies would be super long like Sindbad stories.
I used palm jaggery a fantastic natural sweetener for making this cookies, if you dont like or dont want you to use palm jaggery you can still makes these eggless,butterless cookies with sugar or honey. I used chunky peanut butter instead of butter, the addition of peanut butter enhances the flavour in these cookies. If am trying anything new,ill always add chocolate chips just to attract my kids, seriously my kids didnt stopped munching these cookies,they just loved it. Palm Jaggery Syrup:
Take half a cup of grated palm jaggery with quarter cup of water, bring it to boil and cook for few minutes until they turns thick.
Strain this syrup with muslin cloth, and let the syrup gets cool.
Cookies:
Preheat the oven to 350F.
Sieve the flour,baking powder,baking soda and salt in a bowl and keep aside.
Now whisk the plam jaggery syrup,chunky peanut butter,vanilla extract in an another bowl.
Now add slowly the dry ingredients to the wet ingredients, fold in the chocolate chips and turn as a cookie dough.
Line the baking tray with a baking sheet, drop enough cookie dough onto the lined baking sheet.
Bake for 10-12minutes.
Let them cool completely and enjoy..

Chocolate are my weakness, if i feel down ill go definitely for baking that to with chocolate. Seriously baking and chocolates gives me more energy and happiness.Thats why i have loads of baked goodies in my space. Trust me i learned many techniques only after entering to this immense virtual world and am still in learning process. We all know that cookies are small edible cake which suits incredible for an evening snacks. Kids goes crazy for this crunchy small cakes and my kids favourite always goes for chocolate chips cookies.
Coming to this double chocolate cookies,since its has double chocolates in it obviously its a double bonanza for chocoholic persons like me.These cookies are extremely dangerously addictive so that you may forget completely about your waist line. These rich cookies will be bit soft when you take them out of the oven, but they will turn firm once they gets cool.. Do take care not to overbake these super chocolatey cookies.This recipe for the letter D as am running this months long marathon with alphabets and with baked dishes as theme.

1cup All purpose flour
1/2cup Unsweetened dutch process cocoa powder
1/2tsp Salt
1/2cup Dark chocolate chunks (coarsely chopped)
1/2tsp Baking powder
8tbsp Unsalted butter
1cup Sugar
1tsp Vanilla essence
Preheat the oven to 350F,line a baking sheet over a baking tray.
Sift together the dutch process cocoa powder,flour,salt,baking powder in a medium bowl.
Meanwhile beat together the butter,sugar,vanilla in a bowl until they turns soft.
Add in the flour mixture, mix well.
Finally gently fold in the chocolate chunks.
Take a medium sized ball from the cookie dough, drop it on the lined baking tray with enough spaces in between.
Bake for 12-15minutes until the cookies are flat with mild crack on the top.
Let them cool for few minutes.
Enjoy this addictive cookies with your favourite drink.

Almond Oats Cookies

Oats, my favourite grains, i never forget to grab them from the nearby organic shop. As am hosting this months Tried & Tasted with Sharmis Passions as this months star blog. The main aim of this event is to chose and cook from her space, i tried this fabulous almond oats cookies two days back from here. This cookies are quite healthy, addictive and really simple to make. I loved the simplicity of this cookies and with less ingredients you can get an incredible crunchy nutty and healthy cookies.Sending to my own event CWS-Oats guest hosted by Amruta Pore and Siris Celebrating First Anniversary.

1cup Rolled oars (dry roasted & grounded)
1/4cup Almonds (deskinned & powdered)
1/4cup Honey
1/2tsp Vanilla essence
1tbsp Yogurt
Preheat at 350F,line baking sheet over a baking tray.
Take the grounded oats, powdered almonds,honey and vanilla essence in a bowl, add the yogurt and turn everything as a stiff dough.
Wrap it and keep in fridge for an hour.
Make medium sized balls from the mixture and flatten it with your plam, press the top with a fork and arrange over the flattened cookies over a baking sheet lined over a baking tray.
Bake for 15-20minutes until the sides and bottom of the cookies.
This cookies will be softer after baking but once its cools these cookies will turn hard.

What Christmas Cookies and Heroin Have in Common

First of all, Merry Christmas to everyone! And if you dont celebrate Christmas, then you know what I mean... dont be all hypersensitive and get offended. The way I see it, if someone said "Happy Hanukkah" to me, I wouldnt take offense, and Id wish them a Happy Hanukkah back. When someone wishes you a happy-anything, why would you inject negativity into the situation? Besides, Christmas has become more than a Christian holiday; I dont really consider myself a Christian to be honest (at least not in the traditional sense), its just a cultural thing to me, and its a tradition in my family. So thats my take. Of course, this has nothing to do with todays post, but screw it, I needed to get that out there. Stop being so sensitive. Im only disrespecting you if you take it that way.

So today, I just want to briefly talk about something I read about on Whole Health Source about food and opioid receptors. The opioid receptors, just like they sound, are the receptors in the brain that are hijacked when you take drugs like heroin. Theyre responsible for the addictive nature of drugs. This "reward" system is what calls at you to have a cigarette, snort some coke, or inject some heroin. And the more you do it the more you want it.
But this wiring in your brain has a practical purpose; its not there solely to make sure you end up living in a cardboard box with nothing but your dog and your needles. Although its pretty good at that too. But its there to encourage behaviors that promote your survival, so that youll continue to do them. Like eating food for example. Obviously, eating is important for survival, so this reward system encourages us to eat foods high in calories and important nutrients. Eating grass wouldnt get us anywhere; theres no calories for us in grass, and thats why you dont crave it.
As you can imagine, this system is NOT designed for todays food environment, where there are excessively yummy treats at every turn. This seems like, to me, the driving factor behind obesity. Foods high calories, sugar, fat, and salt stimulate the reward system the most. This is why we cant eat just one potato chip; its why theres always room for dessert. Your body wants those calories like a drug... literally.
Personal example: Just the other night at Whole Foods Market, my place of employment, I found myself binging on the center of several free cinnamon buns in the dish room. Everyone knows the center is the best. But I wasnt even hungry at the time. Reward circuits just took over. Luckily I have a metabolism like a ring-tailed lemur.

Manipulating the Reward System
Its been known for a long time that injecting opioids along with a meal will increase the perceived palatability of the meal, hence increasing the amount of food they eat. In essence, this artificially stimulates the opioid receptors along with a food that wouldnt normally elicit such a response. It wont change someones perception of the taste of a food, but it increases their wanting for it nonetheless. Thats the power of the brain.
Interestingly, this phenomenon works in the opposite way too. Using a drug called naltrexone, which blocks the opiate receptors in the brain, we can reduce ones desire for palatable food without affecting their perception of taste. From the study, "Specifically, systemic infusions of the opioid antagonist naltrexone in humans reduce reported affective or pleasantness ratings of sweet and fatty foods while not affecting subjective reports of hunger or the ability to detect sweet or salty tastes. Similar data has been reported in rats from a variety of paradigms. (1)"
This is incredibly interesting to me. Nothing about the food has changed, and in fact, the person is still able to taste it just the same as before. But the brains perception of the food has totally changed, and that makes all the difference.
This proves that ones wanting for a food goes beyond taste. Yes, people tend to eat things that taste good... foods that are fatty, salty, or sweet. But being fatty, salty, and sweet doesnt make a food palatable; its the brain that does that.
So there are more than just a few parallels between food and addictive drugs... in fact, the reason we crave that Christmas cookie is the same reason we cant stop shooting up with heroin, and its via the same physiological response. Is food addictive? You bet it is.

So today, I just want to briefly talk about something I read about on Whole Health Source about food and opioid receptors. The opioid receptors, just like they sound, are the receptors in the brain that are hijacked when you take drugs like heroin. Theyre responsible for the addictive nature of drugs. This "reward" system is what calls at you to have a cigarette, snort some coke, or inject some heroin. And the more you do it the more you want it.
But this wiring in your brain has a practical purpose; its not there solely to make sure you end up living in a cardboard box with nothing but your dog and your needles. Although its pretty good at that too. But its there to encourage behaviors that promote your survival, so that youll continue to do them. Like eating food for example. Obviously, eating is important for survival, so this reward system encourages us to eat foods high in calories and important nutrients. Eating grass wouldnt get us anywhere; theres no calories for us in grass, and thats why you dont crave it.
As you can imagine, this system is NOT designed for todays food environment, where there are excessively yummy treats at every turn. This seems like, to me, the driving factor behind obesity. Foods high calories, sugar, fat, and salt stimulate the reward system the most. This is why we cant eat just one potato chip; its why theres always room for dessert. Your body wants those calories like a drug... literally.
Personal example: Just the other night at Whole Foods Market, my place of employment, I found myself binging on the center of several free cinnamon buns in the dish room. Everyone knows the center is the best. But I wasnt even hungry at the time. Reward circuits just took over. Luckily I have a metabolism like a ring-tailed lemur.

Manipulating the Reward System
Its been known for a long time that injecting opioids along with a meal will increase the perceived palatability of the meal, hence increasing the amount of food they eat. In essence, this artificially stimulates the opioid receptors along with a food that wouldnt normally elicit such a response. It wont change someones perception of the taste of a food, but it increases their wanting for it nonetheless. Thats the power of the brain.
Interestingly, this phenomenon works in the opposite way too. Using a drug called naltrexone, which blocks the opiate receptors in the brain, we can reduce ones desire for palatable food without affecting their perception of taste. From the study, "Specifically, systemic infusions of the opioid antagonist naltrexone in humans reduce reported affective or pleasantness ratings of sweet and fatty foods while not affecting subjective reports of hunger or the ability to detect sweet or salty tastes. Similar data has been reported in rats from a variety of paradigms. (1)"
This is incredibly interesting to me. Nothing about the food has changed, and in fact, the person is still able to taste it just the same as before. But the brains perception of the food has totally changed, and that makes all the difference.
This proves that ones wanting for a food goes beyond taste. Yes, people tend to eat things that taste good... foods that are fatty, salty, or sweet. But being fatty, salty, and sweet doesnt make a food palatable; its the brain that does that.
So there are more than just a few parallels between food and addictive drugs... in fact, the reason we crave that Christmas cookie is the same reason we cant stop shooting up with heroin, and its via the same physiological response. Is food addictive? You bet it is.

Eggless Pinwheel Cookies Home Bakers Challenge 3

After shortbread sandwich cookies and eggless peanut butter cookies, i baked some addictive pinwheel cookies with vanilla and chocolate eggless doughs. These pinwheel cookies are in my to do list since a long and i seriously want to make them atleast during this year, yep you read it correctly these pinwheel cookies are in my to do list since many years.Finally i baked them few days back for our this months Home Bakers Challenge,an another cookie suggested by Viji.
These chocolate and vanilla pinwheel cookies are quite popular among the pinwheel cookies and i know this cookies are quite buttery,addictive also it my kids favourite. I can bake this recipe for days in row and the cookies will disappear definitely super fast. If you make a huge quantity of this cookie dough, the nice thing is that you doesnt need to bake them all at once, you can store this cookie dough in freezer for a long and you can bake it anytime whenever you crave for some.An excellent evening snack to munch with a cup of warm milk or coffee.Sending this cookies to Gurus Giveaway - Kids Special.

1+1/2cups All purpose flour
1/2tsp Baking powder
1/4tsp Salt
1/2cup Unsalted softened butter
3/4cup Sugar
3tbsp Milk (as per need)
1tsp Vanilla
1tbsp Unsweetened cocoa powder
1/4cup Semi sweet chocolate (melted)
Sift the all purpose flour,baking powder and salt,keep aside.
In a mixing bowl, beat the butter and sugar until they turns smooth and light.
Add in the vanilla extract and 3tbsp of milk, add the flour mixture slowly and knead everything as smooth dough.
Remove half of dough and keep aside.
Now add the cocao and melted chocolate to half of the dough and blend it well.
Roll the doughs as thick discs and cover it with plastic cling film and keep in fridge for an hour.
Roll out both doughs as 12inch square between 2pieces of parchement paper.
Remove the top sheet of parchement paper from both vanilla and chocolate rolled square and filp the chocolate dough over the vanilla dough.
Roll over the top with a rolling pin to make the doughs adhere.
Roll up tightly the dough as a big log.
Trim the sides and caully slice the logo into 1/4inch thick cookies.
Preheat the oven to 350F.
Transfer the unbaked pinwheel cookies to a baking sheet lined over a baking tray and bake for 10-12minutes.
Cool it on wire rack and enjoy.

Eggless Thumbprint Chocolate Cookies

I have already posted a super attractive thumbprint cookies with custard powder,everyone at home enjoyed thoroughly those cuties, from that day my lil one started asking me to make again with chocolate. This weekend,he bugged me very much and finally i finished making some with an easy chocolate sauce,you can replace very well this chocolate sauce with nutella spread.
Since i ran out of the nutella, i prepared quickly a ganache like chocolate sauce. These cookies are big hit at home again and we couldnt stop munching these beauties.These attractive cookies tastes absolutely incredible,quite addictive,super buttery and definitely a kid pleaser. As usual i prepared my thumbprint cookies as eggless version,if you dont like chocolate filled cookies, you can go very well for any kind of jams.Sending to 60days of Christmas hosted by Priya and Divya.

1+1/2cups All purpose flour
1/2cup Butter (room temperature)
1/4cup Confectioners sugar
1tsp Vanilla extract
2 tbsp Milk
For chocolate sauce:
1/4cup Dark chocolate bar (chopped roughly)
2tsp Butter
1tbsp Cream
Since i ran out of the nutella, i prepared quickly a ganache like chocolate sauce. 1tsp Vanilla extract
2 tbsp Milk
For chocolate sauce:
1/4cup Dark chocolate bar (chopped roughly)
2tsp Butter
1tbsp Cream
Preheat the oven to 350F, line a baking sheet over a baking tray and keep aside.
Whisk the butter,confectioners sugar together until they turns creamy, add immediately the flour,vanilla extract ,milk and gently mix until they forms as a soft dough.
Shape the dough into small walnut sized balls and flatten them gently. Place them on the lined baking tray.
Make an indentation in the middle of the each cookie and bake for 15-20minutes.
Meanwhile heat the chopped dark chocolate chunks,butter and cream in microwave oven for 2 minutes,whisk it well to make a thick chocolate sauce.
Once the cookies gets cooled, fill the cookies with the prepared chocolate sauce.
Enjoy with a cup of tea.


Eggless Shortbread Sandwich Cookies Home Bakers Challenge 3

After pizza and a marvellous marble cake, our this months Home Bakers Challenge landing towards to the cookies world. This months host Vijayalakshmi of Virunthu Unna Vanga suggested a humble bunch of cookies, seriously her choice of cookies were just amazing. Definitely all the members of this group would have enjoyed thoroughly this months challenge as much as the two earlier challenges. I baked 3 cookies out the 4 cookies Viji suggested for this months challenge, yep each and every selection of cookies viji suggested were stunning and pulled us to make them as much as we can.
Coming to this shortbread sandwich cookies, i baked them just before few days. These shortbread cookies are amazing. I baked a super buttery shortbread cookies which sandwiched them later with some strawberry jam. These cookies looks exactly like the famous Linzer cookie eventhough linzer cookies have nuts and cinnamon in it. Butter in this shortbread dough give a wonderful flavour and trust me these cookies are dangerously addictive. You cant stop just with one cookie and am sure these cookies are big hit among the kids.Sending this beauties to Gurus Giveaway - Kids Special.

3+1/2cups Flour
1/4tsp Salt
1+1/2cup Unsalted butter (room temperature)
1cup Sugar
1tsp Vanilla essence
Strawberry jam (as per need)
Confectioners sugar (as per need for dusting)
In a bowl, beat together the butter,sugar until they turns smooth.
Add the vanill and mix it.
Meanwhile in an another mixing bowl,sift the flour,salt. Add gradually to the butter-sugar mixture and combine well to make a soft dough.
Dump onto a surface dusted with flour,shape it as flat disc,wrap it in plastic and let them sit in fridge for 30minutes to an hour.
Roll the dough as 1/4inch thick in floured surface and cut it with a cookie cutter as plain or fluted cookies.
Count the rounds and divide them in half.
With a small bottle lid, cut a hole from the each round.
Now transfer the cookie rounds to the baking sheet lined over a baking tray with enough space in between;
Arrange them again in fridge for 15minutes.
Preheat the oven to 350F. Now bake the chilled cookies for 15-20minutes until the edges turns lightly brown.
Allow them to cool completely.
Now dust the top of the baked cut-out cookies with confectioners sugar,spread the jam on the flat side of the cookie.
Assemble the cookies as sandwich and store them in a air tightened box and enjoy.
